Moore didn't have to use both hands...he was just demonstrating proper technique for the kiddies watching. Besides, you've gotta admit, two hands looked pretty damn good in this scene.
Actually, as loathe as I am to admit it, Moore looks the best in that montage. The others have to catch their balance a little as they spin to do the one-handed shot. Moore looks rock-solid.
Yeah, Moore's doing it the correct way. And I believe Craig uses two hands as well in the Quantum of Solace sequence (from the END of the movie - grumble, grumble). Personally, I like the Dalton pose from the publicity stills, that was used on the Living Daylights poster campaign. It's easier to be steady in a still shot, but that image looks most iconic to me.
